The combination of banana and poppy seeds gives this cake a wonderfully soft texture and delicious flavor. The banana brings natural sweetness and moisture, while the poppy seeds provide a pleasant, nutty crunch. Ingredients

  • 200g poppy seeds
  • 4 tablespoons flour
  • 4 tablespoons sugar
  • 2 tablespoons protein powder
  • 1 teaspoon baking powder
  • 1 banana
  • 3 eggs
  • 4 tablespoons oil
  • 300ml milk (I used oat milk)

Instruction for baking poppy seed cake

Step 1 – Soak the Poppy Seeds

Poppy seeds add a deliciously nutty flavor and fun texture to this protein-packed banana cake. But they also need a little help softening up before baking.

Start by pouring the poppy seeds into the milk. Let them soak for at least 15 minutes, or up to a few hours. This gives the hard little seeds time to absorb the liquid and become plumper and softer. Soaking the poppy seeds ahead of time prevents them from creating a gritty texture in the baked cake. It helps each tiny seed reach its full flavor potential.

Step 2 – Mix the Wet Ingredients

In one bowl, mix the following wet ingredients – eggs, banana, milk, oil and banana.

Gently whisk together until well combined. The banana will help sweeten and bind the batter, while the eggs and oil add moisture. Be sure to mash the banana thoroughly so there are no large chunks remaining.

Step 3 – Mix the Dry Ingredients

In another bowl, mix together the flour, baking powder, sugar, and protein powder. Make sure there are no lumps in the dry ingredients. Using a sifter can help get rid of any clumps.

The dry ingredients for this recipe include – flour (chickpea flour in my case, but you can use any flour you like), sugar, protein powder and baking powder.

Mixing these ingredients well is an important step that helps ensure the cake turns out fluffy and evenly baked. The baking powder in particular needs to be distributed throughout the batter to rise and bake properly.

Step 4 – Combine the Wet and Dry

Gently fold the wet ingredients (egg, banana, milk and oil mixture) into the dry ingredients (flour, protein powder, sugar and baking powder) until just combined. Be careful not to over mix, which can result in a dense cake texture. The batter should be well blended but still have some small lumps.

After mixing these two mixture, add soaked poppy seeds and mix well.

Step 5 – Bake the Cake

Preheat the oven to 200C (400F). Grease a cake pan with oil or non-stick cooking spray.

Pour the cake batter into the prepared pan and smooth the top. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Once cooled, if desired, you can spread melted chocolate or simply dusted with a light coating of powdered sugar.
