It’s finally summer and temperatures are very high. Last thing we need during hot summer days is standing in the kitchen and making complicated meals for our family.
If you are looking for a healthy, protein-packed meal that’s simple to make, look no further! This post will provide a recipe that includes all the protein you need in a meal and takes minimal time and effort to prepare.
And probably you already have all ingredients in your house.
This protein-packed meal can be used as on-to-go breakfast or hearty dinner.
Protein-packed crustless zucchini pie
- 1 egg and 3 egg withes
- 1 cup of corn flour
- ½ cup of buckwheat flour (rice flour is OK too)
- ½ cup of corn meal
- ½ cup of unflavored vegan protein powder
- 1,5 cup of mineral water
- Salt
- 1 baking powder
- 2 tbsp oil
- 1 zucchini medium size or two small – chopped in small squares.

Mix egg and egg whites and add mineral water. In other bowl mix flour, protein powder, baking powder, salt. Add flour mixture to wet one and mix it well. At the end, mix very gently zucchini in blend.
Bake for 35 min on 180 C.
You can put creamy cheese on the top or sour cream.
