The other day I made this very moist and tasty gluten free protein banana bread that I couldn’t keep for myself. Even though I don’t like sweet bread for breakfast, I made an exception for this one.
It’s sweet, flavorful, and sure to satisfy your taste buds. Recipe is very simple and easy. Here is a list of ingredients:
- 2 ripe bananas, mashed
- ¼ cup if sugar or honey
- 2 large eggs
- 1 teaspoon baking powder
- ½ cup of rice flour
- ½ cup of oatmeal
- ½ cup of rice protein
- ½ teaspoon of psyllium husk
- 1 cup of oat milk
- ½ cup of dr roasted peanuts
- ¼ cup of dry cranberry
Instructions:
Preheat your oven to 220°C and grease a loaf pan.
In a large bowl, mix the mashed bananas, honey or sugar, eggs, until well combined. Add rice and oatmeal flour, protein powder, husk and baking powder. Mix it well until the batter is smooth.
Add roasted peanuts and dry cranberry. Pour the batter into the greased loaf pan and smooth the top with a spatula.
Bake for about 35 minutes or until a toothpick inserted into the center comes out clean. Let it cool for a few minutes in the pan, then transfer it to a wire rack to cool completely before slicing.


For a balanced breakfast, I took 2 slices of this protein banana bread bread with 1 teaspoon of peanut butter on the top of one slice and omelet with 1 whole egg and 3 egg whites.
Mid-day snack
For mid-day sweet snack I recommend you to try dates filled with peanut butter covered with chocolate. It’s great and healthy option.
